The leaves of the curry tree are used in the Indian kitchen to make curries. When the leaves are dried they lose most of their taste, so they can best be eaten fresh from the tree. It is an easy plant to grow indoors, and you will always have fresh curry leaves available. The leaves can be cooked with the curry sauce, and can be taken from the sauce before serving (just like laurel). Because it is a tropical tree that originates in southern India, it needs to be grown indoors in temperate climates. A well drained soil (for example cocopeat) is recommended, as well as a light stand. Spray the plant regularly with water.
The seeds have a very short viability, and need to be planted as soon as possible. Sow the seeds in sowing mix, keep the soil constantly moist and let the seeds germinate in a warm spot.
